Halibut (Hippoglossus hippoglossus) is one of the most prestigious fish available here at the Atlantic and is now permanently found on our menu’s.  During more recent years Halibut has been successfully farmed in North Atlantic waters but due to its slow growth rate still commands a significant premium and line caught wild fish is as common in the marketplace for a similar price.

 

Halibut is an exceptionally firm and meaty textured fish with thick white milky tasting flakes and is probably better battered than Cod itself.  Due to its robust texture Halibut also grills very nicely and as such can be enjoyed with crushed new potatoes and concasse tomatoes or on a bed of cheese’n’chive mash, perhaps with tempura battered samphire or traditional mushy peas on the side.

 

Our Halibut is trimmed, boned and cut into thick steaks ready for cooking in house.  All of our Halibut is fresh and portioned from very large ‘chunks’ purchased directly from British fish markets.
