Also know as Huss, Rock Eel or Dogfish.  Rock salmon (Scyliorhinus stellaris)  has enduring popularity in and around the London area due to its meaty, monkfish-like texture which is ideal for battering.  Rock salmon is another fish that handles strong flavours well such as curry sauce or other hot spices and is served skinless with one cartilaginous back-bone in the center which is easily navigated.  Rock flesh is usually slightly pink before cooking but clean and white afterwards and really is well worth a try if you like a thicker textured meaty fish.

 

Due to its tougher skin our Rock Salmon is cooked and served skinless.  We are happy to  offer our Rock Salmon battered, chargrilled plain or in Cajun spices, steamed, breaded, gluten free battered or coated in our light fusion batter for those seeking a healthier option.
