Skate is native to our shores and encompasses a number of sub species, all with very similar textures and flavours.  Much like shark and dogfish, skate has cartilage instead of bones characteristically fanning through the wings (the most edible part) requiring a technique of dragging the meat off the wing with a fork or knife.  Once mastered it is quite simple to eat skate without any trouble and well worth it, the lightly pink tinged flesh is delightfully sweet and takes citrus flavours very well.

Skate is equally good battered or grilled but avoid the Cajun rub as it will overpower the fragile flavour of the fish.  Skate is currently found on our specials board when available and is religiously purchased from Newlyn market – the best in Britain.
